Best thing I've found for the Apple II (and what I use my IIc+ mostly for) is BASIC. It's built in, it's easy, and it can be a blast to type crap into your computer and watch it do what you told it to do. I love playing with my Apple II for that very reason.
Same here... Applesoft is very easy to get into and there's tons of documentation available online. Assembly Language is also surprisingly accessible, once you make the mental leap.
