Find the old Apple manual "A Touch of Applesoft Basic". It should get you started. If I find an extra one around my house sometime I'll let you know--I may have a few copies in my manual boxes.
As far as programs are concerned, one that I'd look for is Broderbund's FantaVision. It's an old-school animation program and is quite addicting. Try to find a copy with the manual; it is one of those texts that is worth reading when you are trying the program out. (I normally don't rave about manuals...although most Broderbund ones were pretty good).
