8.6? 8-o That's prehistoric!
Why not try Tiger on there, it can easily handle it (with some extra memory of course) and in my opinion would be a lot more fun with it
Or if you do want Classic, surely 9.2.2 is the logical choice? I've never really used 8.x OSes, despite my recent acquisition of a real copy of 8.5, as I don't have any 68ks that can take 8.1 and there aren't any Macs that can take 8.6 that can't take 9 so I don't see that you would ever use that one nowadays.
Looks a nice machine though, and it's great to get all the bits with it like that
