Update 2: Eureka!! I changed the bulky apple 80 column card for a small, generic 80 column card that I had bought to use on another machine and it solved the problem!!!
The question now is, why does my apple 80 column card cause the machine to display gibberish when using certain graphic programs like GEOS or Apple II desktop, but others work fine mousepaint ? (i guess that that one only uses 64k?). ADTpro shows the extra 64 k on the Apple 80 column card and I can write data to it with no problem, so in that regards it seems to be working.

Any ideas?

The problem could be in the chips on the apple extended 80 column card. Try pushing them in, to make sure they are all seated correctly. Beyond that I have no idea, but maybe somebody else here can help.
