Unless you're a Unix wizard like John, who doesn't mind this, you'll need to basically recompile everything facing the public, and at that point, why not just run a regular Unix? The benefits of OS X for "simplicity" are lost then. (OS X isn't really that good at being a server anyways.)

I suggest going regular x86 and using your G3 for ASIP for some classic Mac OS workgroup fun.
