Is there documentation on programming the DSPs in the AV Quadras?

I presume you mean on the raw silicon rather than using the Sound Manager or QuickTime?

You would be correct. I'm just curious how difficult it would be to implement anything for Linux or BSD.

If you're already familiar with general DSP programming under *nix, deeply intimate with scraping-the-silicon level development for mid-90s Mac hardware, and can find the documentation for all of the above and the Motorola 56001 series ...

... not very
