Right.

Assuming my SCSI card works (which I haven't tried), will it be ok to format an external 200 Mb SCSI disk, install GS/OS on it and use it to store and catalog all the 200+ floppies that are laying around?

Yes. You'll need to use your SCSI card's firmware or other software to partition and format the drive, though. ProDOS 16 will see at most 32 megabytes per partition, so it'll need to be divided up. But again, your SCSI card came with a way to do that. Which card do you have?
