It's been a long time since I've used it, but I believe Bernie ][ The Rescue is what you need. I used to set up a small ProDOS formatted RAM disk in MacOS and copy whatever files to it... then you can launch Bernie and mount the RAM disk (or physical partition) and subsequently copy the files to a blank disk image. File forks are still a problem, so I would use Unforkit on Bernie to deal with that.
