One thing I thought interesting was that other than the ram, my PowerMac 6100 with the NewerTech G3 card actually has better specs than it. (250Mhz w/1MB L2 cache.)

Perhaps, but overclocking the existing CPU and/or installing a replacement is trivial. If you adjust the jumpers, the existing 233 should overclock to 266 and, possibly 300. My own Beige has a 350 chip from a B&W and is overclocked to 400mhz.
