System 7.5 and 7.6 should have no problems at all with larger partition sizes. "practical limit" is such a bad term to begin with. What most people mean by it is that if you use HFS on a disk bigger than about 4 gigabytes, each file is going to end up huge. If you're working with video or disk images, then this isn't really a problem, but it's an "inefficient" use of the hardware. (Not that it matters in an era where you can only easily find 32-gig CF cards.)

The solutions are to deal with it or to manually create and use partitions less than the full size of the disk.

Another possibility is to try out system 7.1 to see if its disk tools will let you use that big media. (7.1 should have no problems with 1 or 2-gig partitions.)

In terms of 7.5.3 vs 7.6.1 in operation on a Color Classic: you're not going to see a really big (any?) performance difference between the two. Ripping out unused extensions will make either of them faster, and you'll be able to minimize RAM use, but you won't get as slim as 7.1 with 7.5 or 7.6. (So if you want newer stuff that 7.5 has built in, you may as well go all the way forward to 7.6.)
