The IIfx is a tempting machine... however, the special 64-pin SIMMs could be a problem.
About the FD, I believe the 7100 uses the manual inject drive, while the IIfx takes the older auto inject. It may work, but probably the case design will prevent inserting the floppies all the way.
The missing red on the monitor could be something simple -- or not. Check the cables and the card, just in case.
