DAVE 2.5.1 has a 68k version; that software allows SMB connections from pre-OS X Macs. It also has NetBIOS support so that you can set a NetBIOS-compatible hostname, if you need to.

If your file server is running Linux, you can easily install Netatalk to support AppleShare over IP. This is what I use with my 68k Macs and OS 9 on my PPC Macs, and it works flawlessly.
