I'm pretty sure someone did announce an adapter like the one you describe--a dock adapter which creates a remote connector. I'd say check with all the major accessory manufacturer…

You can dual boot RockBox and Apple's firmware, so you should be able to sync with iTunes and use RockBox for playback.

Hopefully, it will run on my 10GB iPod (2G).
