Ideally you can hold the play and menu buttons, but you might need to plug it into the AC adapter before doing that. PLugging it in helped me for really tough freezes.
If you have Diskwarrior, can run it on an iPod. I've heard of some iPods running out of space or being filled to the max and having some problems. If it continues, try a reinstall.
