No, you can't put a 2.5" drive (from your link) in a 1.8" enclosure (your iPod). 1.8" drives are expensive; about $5/GB. Froogle it.

You can dual boot RockBox and Apple's firmware, so you should be able to sync with iTunes and use RockBox for playback.
