How much would a Apple 2GS Woz edition be worth with a 2.5" and 5.25" floppy drives and nice condition case?

About $10. Unless you're some sort of insane Apple-collecting freak, then God only knows how much it's "worth."

I thought that they were worth a little more than that, considering that it's working.

I was willing to pay up to $40 for one. Now I might not get it. :'(

How about a working Lisa 2 with MacWorks?

If you're willing, and you want it, then go ahead. Just beware that you would likely be paying a bit of a premium (but not too much).
