I found an app called New Notepad II. It should fit the bill quite nicely.

While New Notepad II is not an application for creating and maintaining journals or diaries per se, it does allow you to date and time stamp entries. It also allows you to group notes in logical folders so that all related material is kept together. It is quite a nice little piece of software.
