All QuickTakes are colour.
I have an example of each, including the "Quicktake 100 Plus" (which was a motherboard upgrade performed by Apple to bring a 100 to 150 specs).
The 100 and 150 were manufactured by Kyocera I believe, and the 200 by Fuji.
The 100 and 150 can only be used as a still camera (but can be computer controlled as someone has already mentioned).
The 200 software I have only syncs with the camera's media card and doesn't allow video streaming - but others may have seen it.
The Apple Quicktime Conferencing Camera (I've one of those too) was Apple's answer to an Apple badged QuickCam.
