Did you try clicking the icon and pressing return?
Select the hard disk icon on the Desktop and click CMD-I (Get Info).
Is it locked? Other than that I can't think of anything that would prevent you from editing the name... [

Click the icon. Wait a second or to, then click it again so the texy is highlighted like selected text, and you can type.

I recall this same annoying bug from years ago. The only solution I ever found was to get info on it in ResEdit - you ought to be able to at least edit the name directly from there, and I believe there may be some sort of "name locked" flag you can turn off as well. I believe there was also a hack called HardDiskRename or something similar.

To add to Patrickool93's advice, click not on the icon but on the text pane below it. Icon and name pane are separate entities for this purpose. First click highlights the name. Second click makes the text accessible for editing if the disk is not locked in Get Info. and if FileSharing is off (File::Sharing... from the menu).
If Sharing... is greyed-out, it is not active or not capable of being activated (because it hasn't been set up).
